During our last day at the Salvation Army we felt like old pros, slicing pies and slapping together sandwiches. Andrew, our youth group's chef-in-training, even taught us how to get a little fancy with some airborne sandwich preparation.

After our daily shower trip we wandered a few blocks from the church over to the Texas State Capitol for a little educational sightseeing. Did you know it's actually taller than our nation's capitol building in DC? We do...now. And in addition to all the nifty paintings and statues, we even found a Texas Ranger (or was he a state trooper?) who was kind enough to pose for a picture.

I know that Memphis barbecue is all about pork, but sometimes it's good to broaden your horizons and see what all the fuss is about. In this case, the fuss is the beef barbecue that Texans rave about. County Line Barbecue is a local favorite, dishing up smoked brisket and sausage along with gigantic beef ribs. Throw in a beautiful view of the hill country and you've got the whole Texas BBQ experience in one evening.
